Easter treats come in all shapes and flavours, so don your bunny ears and cottontail and get baking. Don’t be afraid to get creative with themed icing toppings especially for kids Easter treasure hunt treats!
Serves 12
50 g butter
500ml milk
1 cup sultanas
3 cups flour
½ cup bran flakes
½ cup brown sugar
1 tablespoon baking powder
2 teaspoons mixed spice
½ cup mixed peel (optional)
1 teaspoon baking soda
1 lightly beaten egg
Preheat oven to 200 deg C.
Grease 12 deep muffin tins
In a small pot, heat the butter, milk and sultanas, stirring until the butter is melted. Set aside to cool.
In a large bowl, combine all the dry ingredients except baking soda.
Stir the baking soda into the cooled milk./butter mixture.
Add the milk mixture and egg to the dry ingredients and mix until just combined.
Spoon into the muffin tins.
Bake for about 20 – 25 min until golden brown.
Leave in the tins for 5 min before cooling on a rack.
When cool, don’t be afraid to go overboard with themed icing and decorations. Think – crosses, little lolly eggs, baby bunnies and anything cute-as-pie.
