One of our lovely mums at Mainly Music rocked up one Wednesday morning with the most amazing morning tea offering – a jaw droppingly good Rocky Road Slice. I asked Lisa for her recipe and she kindly offered it. We love this Rocky Road recipe and make it now every week.
To make Mainly Music Rocky Road Slice, you will need:
250g plain sweet biscuits, crushed finely
200g butter, melted
125g mixed marshmallows, chopped
½ cup red glace cherries, halved
1/3 cup desiccated coconut
1/3 cup crushed nuts (whichever nuts you prefer – we love pistachios but peanuts are great too)
500g milk chocolate, chopped and melted
How to make Mainly Music Rocky Road Slice:
1) Grease 18cm x 28cm slice pan; line base and two long sides with baking paper
2) Combine biscuit crumbs and better in a large blow, press mixture firmly into pan using a fork. Refrigerate for 20 minutes, or until firm
3) Combine marshmallows, cherries, coconut and nuts in a large bowl; stir in melted chocolate. Spoon evenly over base; refrigerate for one hour until firm
4) Before serving, cut into squares with a hot knife
Tip – crush biscuits in a food processor. You can melt chocolate in a microwave-safe bowl on high for 30 second bursts, stirring after each.
