St Paddys Day Cupcakes

The adults can have their crazy, green hats and Guinness but the kids need to celebrate St Paddys Day too. Here are some wickedly good cupcakes to make with the children to celebrate all things sweet and Irish! The cupcake recipe is simple, moist and scrummy and the icing is so easy to make.

Serves 12

½ cup Rice Bran Oil

1 cup sugar

1 ½ cups self-raising flour

2 eggs

1 punnet of your favourite yoghurt

1 teaspoon vanilla essence

Finely grated rind of 1 orange

Half teaspoon salt

To make these St Patrick’s Day Cupcakes, you will need:
12 pan muffin tin
Paper cupcake holders

How to:
Preheat oven to 180 C (170 C if using fan bake).
Measure oil, sugar, eggs and rind into a food processor and blend until pale and creamy. A hand water or good old-fashioned wooden spoon in a bowl works just as well!
Add the yoghurt and vanilla and whiz again.
Sift in the self-raising flour and salt.
Mix just enough to make a fairly smooth and light batter.
Place into paper patty-pan lined muffin tins and bake for 14 minutes.
When cool, ice and decorate with your favourite green icing, or white works well too. See our picture for inspiration and serve on a cupcake stand decorated with green ribbon or streamers.

Extra cupcake icing hints:

Sprinkle silver balls.
Find green stripped lollies or green licorice.
Marzipan icing from Millies Kitchen Shop, and other home kitchenware stores, can be moulded as shamrocks. Buy green, white and black and make a leprechaun belt buckle.
Alternatively, larger green and black lollies like aeroplanes can be cut into leprechaun heads and ears.
White piped icing completes facial expressions or hold shamrocks in place.
