Translated from Italian, Tiramisu means Pick Me Up. And that is what this light Italian cheesecake trifle will do!
Serves 8
For Tiramisu, you will need:
1¼ cups hot water
1½ Tbsp Coffee of your choice
4 Tbsp brandy or almond liqueur
300g mascarpone
2 eggs, separated
¼ cup icing sugar
1 cup finely grated Cooking Chocolate
250g sponge finger biscuits or sponge cake cut into fingers
How to make Tiramisu:
Combine hot water and coffee in a shallow dish and allow to cool. Stir in 3 Tbsp brandy or almond liqueur.
In a medium bowl whisk mascarpone, egg yolks, icing sugar and remaining brandy or liqueur together until pale and thickened.
Whisk egg whites in a small bowl until peaks just fold over when whisk is removed. Gently fold egg whites into mascarpone mixture with ½ cup grated chocolate.
Dip sponge finger biscuits into the coffee mixture. Make a single layer of sponge fingers on the base of a deep rectangular glass dish, then cover with a layer of the mascarpone mixture. Repeat with a second layer of sponge fingers and mascarpone mixture.
Sprinkle the remaining ½ cup of grated chocolate over the dessert. Cover and chill the tiramisu in the refrigerator for several hours, preferably overnight.
